I want to share my Excel File with others so it can be updated without emailing it back and forth. An essential part of that plan is to be able to export it back to Excel after it is updated. Is there any way to do this?

No not at this time, although such a feature is being considered.

Right now, Vyew treats documents like hardcopies, so you and your participants
can write over documents as if it was a printed piece of paper,
then someone would have to pull those changes manually back into excel.
